  • 2 acorn squash (about 800g each)
  • 1 cup cooked quinoa (185g)
  • 1/2 cup dried cranberries (60g)
  • 1/4 cup chopped pecans (30g)
  • 2 tablespoons maple syrup (30ml)
  • 1 tablespoon olive oil (15ml)
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste

Gather the following kitchen tools:

  • spoon
  • mixing bowl
  • fork

Preheat your oven to 400°F (200°C). Cut the acorn squash in half lengthwise and scoop out the seeds. Place the squash halves on a baking sheet, cut side up. In a mixing bowl, combine the cooked quinoa, dried cranberries, chopped pecans, maple syrup, olive oil, cinnamon, salt, and pepper. Mix well until everything is evenly combined.

Divide the quinoa mixture evenly among the squash halves, pressing down gently to pack the filling. Drizzle a little extra maple syrup on top for an added touch of sweetness. Cover the baking sheet with foil and bake in the preheated oven for about 40-45 minutes, or until the squash is tender.

Once the squash is cooked through and the filling is golden brown, remove from the oven and let it cool slightly before serving. The aroma of cinnamon and maple will fill your kitchen, creating a warm and inviting atmosphere.
