Spaghetti Squash Carbonara with Crispy Pancetta

Today, I am excited to share my twist on a classic Italian dish with a delicious and unique ingredient. Spaghetti squash is a fantastic alternative to traditional pasta, adding a light and savory flavor to any meal. Paired with creamy carbonara sauce and crispy pancetta, this dish is sure to impress your taste buds.

Ingredients:

  • 1 medium spaghetti squash (about 1.5 kg)
  • 150g pancetta, diced
  • 3 egg yolks
  • 100g parmesan cheese, grated
  • 2 cloves garlic, minced
  • Handful of fresh parsley, chopped
  • Salt and pepper to taste

To start, preheat your oven to 200°C. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the squash cut side down on a baking sheet and roast in the oven for about 45 minutes, or until the flesh is tender.

While the squash is roasting, cook the diced pancetta in a skillet over medium heat until crispy. Remove from the heat and set aside.

In a mixing bowl, whisk together the egg yolks, grated parmesan cheese, minced garlic, chopped parsley, salt, and pepper. Once the spaghetti squash is done, use a fork to scrape the flesh into “noodles.” Add the squash noodles to the skillet with the crispy pancetta and toss to combine.

Pour the egg and cheese mixture over the spaghetti squash and stir quickly to coat the noodles evenly. The residual heat will cook the eggs, creating a creamy and rich sauce.

Serve the spaghetti squash carbonara in bowls, topped with an extra sprinkle of parmesan cheese and freshly cracked black pepper. Enjoy this unique and flavorful dish!
