Hey there, foodies! Today, I’m excited to share a recipe that brings together sweet and spicy flavors in a delicious stir-fry. This dish is perfect for those days when you’re craving something with a kick, but also want a touch of tropical sweetness. Let’s jump right into it!

Ingredients:

  • boneless, skinless chicken thighs (400g)
  • fresh pineapple (200g, cubed)
  • bell peppers (150g, sliced)
  • red onion (100g, sliced)
  • garlic (3 cloves, minced)
  • ginger (1-inch piece, grated)
  • soy sauce (50ml)
  • sriracha sauce (1 tbsp)
  • honey (2 tbsp)
  • rice vinegar (1 tbsp)
  • cornstarch (1 tbsp)
  • vegetable oil
  • salt and pepper to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • measuring cups
  • measuring spoons

To start, heat some vegetable oil in a wok over high heat. Add the chicken thighs, seasoned with salt and pepper, and cook until browned and cooked through. Remove the chicken from the wok and set aside.

In the same wok, add a bit more oil if needed, then toss in the garlic, ginger, red onion, and bell peppers. Stir-fry for a few minutes until the vegetables are slightly softened.

Next, return the cooked chicken to the wok and add the pineapple chunks. In a small bowl, mix together the soy sauce, sriracha, honey, rice vinegar, and cornstarch. Pour this sauce over the chicken and vegetables and toss everything together until well coated.

Let the stir-fry simmer for a few minutes to allow the sauce to thicken and the flavors to meld together. Adjust seasoning with salt and pepper if needed.

Tips:

For an extra kick of heat, add a pinch of red pepper flakes to the stir-fry. The combination of sweet pineapple and spicy sriracha is already a winner, but this little addition takes it to the next level.

Finally, serve your Spicy Pineapple Chicken Stir-Fry hot over steamed rice or noodles. This dish weighs approximately 1200g in total, with 4 servings at around 300g each. One serving is approximately 400 calories.
