This dish always takes me back to my tropical vacation in Thailand, where I first discovered the perfect combination of crispy shrimp and creamy coconut. It’s a fun and flavorful meal that’s great for any occasion, whether you’re hosting a summer BBQ or just looking to spice up Taco Tuesday.

Ingredients:

  • 250g of shrimp
  • 200ml of coconut milk
  • 1 tablespoon of chili powder
  • 1 lime, juiced
  • 2 cloves of garlic, minced
  • 6 corn tortillas
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste

Kitchen Tools:

To start, heat some oil in a skillet over medium heat. Add minced garlic and cook until fragrant, then add in the shrimp. Cook the shrimp until they turn pink and are cooked through.

In a mixing bowl, combine coconut milk, chili powder, lime juice, salt, and pepper. Pour the mixture over the cooked shrimp in the skillet and simmer for a few minutes until the sauce thickens.

While the shrimp is simmering, heat the corn tortillas in a separate skillet until warm and slightly crispy.

To assemble the tacos, place a spoonful of the spicy coconut shrimp mixture onto each tortilla. Top with sliced avocado and fresh cilantro. Serve hot and enjoy the tropical flavors!
