Thai-Inspired Pineapple Volcano Stir-Fry

As we transition from summer to fall, I find myself craving the flavors of Southeast Asia. Today, I’m excited to share a unique recipe for a Thai-inspired pineapple volcano stir-fry. This dish combines the sweetness of pineapple with the heat of chili peppers, creating a perfect balance of flavors that will surely impress your taste buds.

Ingredients:

  • 200g chicken breast (diced)
  • 1 cup pineapple (cubed)
  • 1 bell pepper (sliced)
  • 1 onion (sliced)
  • 3 cloves of garlic (minced)
  • 1-inch piece of ginger (grated)
  • 2 chili peppers (sliced)
  • 3 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil
  • to taste

Kitchen Tools:

  • wok
  • chef’s knife
  • cutting board
  • grater
  • garlic press

To start, heat vegetable oil in a wok over medium-high heat. Add minced garlic, grated ginger, and sliced chili peppers, and stir-fry for about a minute until fragrant.

Next, add diced chicken breast to the wok and cook until browned on all sides. Season with salt and pepper to taste. Once the chicken is cooked through, add sliced bell pepper and onion to the wok and continue to stir-fry for another 2-3 minutes.

Now, it’s time to create the volcano effect. Push the chicken and vegetables to the sides of the wok, leaving a space in the center. Add cubed pineapple to the center of the wok and sprinkle with brown sugar. Let the pineapple caramelize for a minute before mixing it with the rest of the ingredients.

Finally, pour soy sauce and fish sauce over the stir-fry, and toss everything together until well combined. Adjust seasoning if needed.

Serving:

This Thai-inspired pineapple volcano stir-fry weighs approximately 800g after cooking. It serves 4 people with an average serving weight of 200g. Each serving is estimated to be around 350 calories.

One clever tip for this dish is to serve it in a carved-out pineapple half for a stunning presentation. The sweetness of the pineapple perfectly complements the spicy kick of the stir-fry.
