Today’s Recipe: Sweet Potato and Chickpea Buddha Bowl

Hello, lovely readers! Today, I’m excited to share with you my delicious and nutritious Sweet Potato and Chickpea Buddha Bowl recipe. This colorful bowl is not only packed with flavor but also loaded with healthy ingredients that will leave you feeling satisfied and nourished. Whether you’re looking for a quick weekday meal or a light lunch option, this Buddha Bowl has got you covered.

To create this vibrant dish, you’ll need the following ingredients:

  • 2 medium sweet potatoes, cubed
  • 1 can of chickpeas, drained and rinsed
  • 1 cup of quinoa
  • 1 ripe avocado, sliced
  • 2 cups of fresh spinach
  • 1 cup of shredded red cabbage
  • 2 tablespoons of tahini
  • 1 lemon, juiced
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • Salt and pepper to taste

For this recipe, you’ll need the following kitchen tools:

  • baking sheet
  • saucepan
  • mixing bowl
  • chef’s knife
  • cutting board

Start by preheating your oven to 400°F (200°C). On a baking sheet, spread out the cubed sweet potatoes and chickpeas in a single layer. Drizzle with olive oil, minced garlic, salt, and pepper. Roast in the oven for 25-30 minutes or until the sweet potatoes are tender and slightly crispy.

While the sweet potatoes and chickpeas are roasting, prepare the quinoa according to package instructions in a saucepan. Once cooked, fluff the quinoa with a fork and set aside.

In a small mixing bowl, whisk together the tahini, lemon juice, and a splash of water to create a creamy dressing.

Assemble your Buddha Bowl by dividing the cooked quinoa, roasted sweet potatoes, chickpeas, avocado slices, spinach, and shredded red cabbage among serving bowls. Drizzle the tahini dressing over the bowls and season with additional salt and pepper to taste.

The total weight of the cooked dish is approximately 1200 grams, with 4 servings. Each serving weighs around 300 grams and has an estimated calorie count of 400 calories.

One clever tip for this dish is to add a sprinkle of nutritional yeast for a cheesy flavor boost without the added calories.

I hope you enjoy creating and indulging in this Sweet Potato and Chickpea Buddha Bowl as much as I do. Feel free to customize it with your favorite veggies or toppings to make it your own. Bon appétit!
