Hello foodies! Today, I’m excited to share a recipe that I stumbled upon during a rainy afternoon in June. This dish is a fusion of two of my favorite cuisines — Italian and Thai. The combination may sound unusual, but trust me, the flavors and textures work beautifully together. So, let’s dive into this unique creation!

Ingredients:

  • arborio rice
  • coconut milk
  • cherry tomatoes
  • cilantro
  • lemongrass stalk
  • red chili
  • shallot
  • shrimp
  • garlic
  • ginger

Kitchen Tools:

  • cutting board
  • knife
  • saucepan
  • spoon

To start, heat coconut milk in a saucepan over low heat. Meanwhile, chop the lemongrass, red chili, shallot, garlic, and ginger finely. Add these aromatics to the coconut milk and let simmer for about 10 minutes to infuse the flavors.

Next, stir in the arborio rice and cook until it absorbs the coconut milk, adding a ladleful of water at a time to keep it creamy. Once the rice is al dente, add halved cherry tomatoes and peeled shrimp. Cook for an additional 5 minutes until the shrimp turn pink and the tomatoes soften.

Finally, stir in chopped cilantro and adjust the seasoning with salt and pepper to taste. Serve the dish hot, garnished with extra cilantro leaves for a burst of freshness.

The total weight of the cooked dish is approximately 900g, providing 4 servings. Each serving weighs around 225g and is estimated to be around 350 calories.

One unique tip for this dish is to grate some lime zest over the finished dish before serving. The citrusy aroma adds a delightful twist to the rich and creamy coconut rice.
