As the leaves begin to change colors and the air turns crisp, I find myself craving hearty and comforting dishes that celebrate the flavors of fall. Today, I am excited to share my recipe for Autumn Harvest Stuffed Acorn Squash. This dish is a beautiful and delicious way to enjoy the bounty of the season.

Ingredients:

  • 2 medium acorn squash
  • 1 cup quinoa
  • 1 1/2 cups vegetable broth
  • 1/2 cup dried cranberries
  • 1/2 cup toasted pecans
  • 1 tablespoon maple syrup
  • 1 teaspoon cinnamon
  • Salt and pepper, to taste

To start, preheat your oven to 400°F (200°C). Cut the acorn squash in half and scoop out the seeds. Place the squash halves cut-side down on a baking sheet and roast in the oven for about 30-40 minutes, or until tender.

While the squash is roasting, rinse the quinoa under cold water. In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until the quinoa is cooked and fluffy.

In a mixing bowl, combine the cooked quinoa, dried cranberries, toasted pecans, maple syrup, cinnamon, salt, and pepper. Mix well to combine all the flavors.

Once the squash is tender, remove it from the oven and carefully flip over the halves. Fill each squash half with the quinoa mixture, packing it in gently. Return the squash to the oven and bake for an additional 10-15 minutes, or until heated through.

Serve the Autumn Harvest Stuffed Acorn Squash warm, garnished with fresh herbs or a drizzle of maple syrup. Enjoy the cozy flavors of fall in every bite!
