Today, I’m excited to share a cozy and delicious fall comfort food recipe that combines the sweetness of butternut squash with the tartness of apples. This dish is perfect for chilly evenings when you crave something warm and comforting. Let’s dive into the recipe!

Ingredients:

  • 1 medium butternut squash (about 800g), peeled and diced
  • 2 apples, cored and sliced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of fresh thyme leaves
  • 1/2 teaspoon of ground nutmeg
  • 1 cup of vegetable broth
  • 1/2 cup of bread crumbs
  • 2 tablespoons of butter
  • Salt and pepper to taste

Start by preheating your oven to 375°F (190°C). Peel and dice the butternut squash and slice the apples. In a skillet, melt the butter over medium heat and sauté the chopped onion and garlic until fragrant. Add the diced butternut squash, apple slices, thyme leaves, and ground nutmeg. Pour in the vegetable broth, season with salt and pepper, and let it simmer for about 10 minutes.

Transfer the mixture to a baking dish and sprinkle the bread crumbs on top. Cover the dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15 minutes until the top is golden brown and crispy.

Once the casserole is done, let it cool for a few minutes before serving. The combination of sweet butternut squash, tart apples, and aromatic thyme will fill your kitchen with a delightful aroma that screams fall comfort food.
