A Taste of Marrakech: Homemade Moroccan-Style Lamb Stew Recipe

Today, I’m excited to share with you a unique and flavorful dish that I created just for this special occasion. Inspired by the changing seasons and a recent trip to a spice market, I’ve put together a delicious Moroccan-style lamb stew that will transport you to the bustling streets of Marrakech with every bite.

For this recipe, you’ll need the following ingredients:
– 500g lamb shoulder, diced
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 teaspoon of ground cumin
– 1 teaspoon of ground coriander
– 1 teaspoon of ground cinnamon
– 1/2 teaspoon of ground turmeric
– 1/4 teaspoon of ground ginger
– 400g canned chickpeas, drained
– 400g canned diced tomatoes
– 500ml chicken broth
– Salt and pepper to taste
– Fresh cilantro, for garnish

In terms of kitchen tools, you will need:

  • chef’s knife
  • cutting board
  • large pot
  • wooden spoon

To start, heat some olive oil in a large pot over medium heat. Add the diced lamb shoulder and brown it on all sides. Once the lamb is browned, remove it from the pot and set it aside.

In the same pot, add the chopped onion and minced garlic. Sauté until the onion is soft and translucent. Next, add the ground cumin, coriander, cinnamon, turmeric, and ginger. Stir well to combine and let the spices toast for a minute until fragrant.

Return the browned lamb to the pot and add the drained chickpeas, diced tomatoes, and chicken broth. Season with salt and pepper to taste. Bring the stew to a boil, then reduce the heat to low and let it simmer for at least 1 hour, stirring occasionally.

Once the lamb is tender and the flavors have melded together, taste and adjust the seasoning if needed. Serve the Moroccan-style lamb stew hot, garnished with fresh cilantro.

This hearty stew weighs approximately 2000 grams once cooked and serves 6 people, with each serving weighing around 333 grams. An estimate puts the calorie count per serving at around 400 calories.

One clever tip for this dish is to add a tablespoon of honey towards the end of the cooking process to balance out the savory flavors with a touch of sweetness.
