Today’s Unique Dessert: Tropical Coconut Lime Pie

I woke up this morning craving something sweet, tangy, and refreshing to combat the summer heat. I instantly thought of creating a unique dessert that combines tropical flavors with a creamy texture – and thus, my Tropical Coconut Lime Pie was born.

Ingredients:

  • Digestive biscuits
  • Butter
  • Coconut milk
  • Fresh lime juice
  • Sugar
  • Gelatin
  • Heavy cream
  • Toasted coconut flakes

I started by crushing the digestive biscuits in a food processor until they turned into fine crumbs. Melt the butter and mix it with the crumbs until well combined. Press this mixture into a pie dish to create the crust, then refrigerate it to set.

In a saucepan, heat the coconut milk, lime juice, and sugar until the sugar dissolves. Soften the gelatin in cold water, then add it to the warm coconut mixture, stirring until fully dissolved. Pour this mixture over the prepared crust and chill in the refrigerator for at least 2 hours, or until set.

In a mixing bowl, whip the heavy cream until soft peaks form. Spread this over the set coconut lime layer and sprinkle with toasted coconut flakes for a crunchy finish.

The total weight of the cooked Tropical Coconut Lime Pie is approximately 1200g. This recipe makes 8 servings, with an average serving weight of 150g. Each serving is an estimated 350 calories.
