  • 400ml coconut milk
  • 300g chicken breast, sliced
  • 50g red curry paste
  • 1 whole pineapple, sliced
  • 1 red chili, sliced
  • 4 cloves of garlic, minced

  • 2 stalks of lemongrass, smashed
  • 4 kaffir lime leaves
  • 2 tbsp fish sauce
  • 2 tbsp palm sugar
  • 3 tbsp vegetable oil

To start, marinate the chicken breast with red curry paste, minced garlic, grated ginger, and fish sauce in a bowl. Allow it to sit for at least 30 minutes to let the flavors meld together.

Next, thread the pineapple slices onto wooden skewers and brush them with vegetable oil. Grill the pineapple skewers on a hot grill pan until they are caramelized and slightly charred, about 3-4 minutes per side. Set aside.

In a saucepan, heat vegetable oil over medium heat. Add the lemongrass, kaffir lime leaves, and sliced red chili. Cook until fragrant, about 2 minutes. Then, add the marinated chicken and cook until browned.

Pour in the coconut milk, palm sugar, and let the mixture simmer for 15-20 minutes until the sauce thickens and the chicken is cooked through.
