Moroccan Spiced Lamb Stew

Today, I’m sharing a recipe for a warm and comforting Moroccan spiced lamb stew. This dish is perfect for chilly evenings and always reminds me of cozy family dinners. The blend of spices and tender lamb creates a rich and flavorful stew that will delight your taste buds.

Ingredients:

  • 600g lamb shoulder, diced
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 stalks of celery, chopped
  • 3 garlic cloves, minced
  • 1/2 cup dried apricots
  • 1 can of chickpeas, drained and rinsed
  • 4 cups of chicken broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 1/2 tsp cinnamon
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro, chopped (for garnish)

To start, heat olive oil in a large pot over medium heat. Add the diced lamb and brown on all sides. Remove the lamb from the pot and set aside.

In the same pot, sauté the onion, carrots, celery, and garlic until softened. Add the ground cumin, coriander, paprika, and cinnamon. Stir well to coat the vegetables in the fragrant spices.

Return the browned lamb to the pot and add the dried apricots, chickpeas, and chicken broth. Season with salt and pepper to taste. Bring the stew to a boil, then reduce the heat and let it simmer for 2 hours, or until the lamb is tender.

Once the stew is ready, serve hot with a sprinkle of fresh cilantro on top. The aroma of the spices and tender lamb will fill your kitchen, promising a delicious meal ahead.
