  • mixing bowl

Begin by preheating your oven to 375°F (190°C) and cooking the quinoa according to the package instructions. While the quinoa is cooking, slice the figs in half and roughly chop the pistachios. In a small bowl, mix the honey, balsamic vinegar, and a pinch of salt to create a dressing.

Once the quinoa is cooked, transfer it to a mixing bowl and drizzle the truffle oil over it. Crumble the goat cheese into the bowl and add the figs, pistachios, and chopped rosemary. Pour the honey-balsamic dressing over the mixture and gently toss everything together.
