Hello, lovely foodies! I am excited to share a brand new recipe with you all today. As we’re approaching the fall season, I wanted to create a snack packed with autumn flavors and healthy ingredients. This dish is perfect for satisfying those mid-afternoon cravings or for a quick pre-workout boost.

Ingredients:

  • kale
  • sweet potato
  • quinoa
  • cinnamon
  • unsweetened almond butter
  • maple syrup

Kitchen Tools:

  • baking sheet
  • oven
  • saucepan

I start by preheating the oven to 400°F (200°C) and lining a baking sheet with parchment paper. While the oven is heating up, I wash and chop up 50g of kale into bite-sized pieces. I then peel and dice a medium sweet potato into small cubes.

Next, I cook 100g of quinoa in a saucepan according to the package instructions. Once the quinoa is cooked, I toss the kale and sweet potato with a sprinkle of cinnamon on the prepared baking sheet. I roast them in the oven for about 15-20 minutes, until the sweet potato is tender and the kale is crispy.

In a small saucepan, I mix 1/4 cup of unsweetened almond butter with 1 tablespoon of maple syrup over low heat until it’s smooth and creamy.

Once everything is cooked, I assemble the snack by layering the cooked quinoa on the bottom, then topping it with the roasted kale and sweet potato mixture. Finally, I drizzle the almond butter maple sauce on top for a delicious finishing touch.

Tip:

For an extra crunchy texture, try adding a handful of chopped nuts or seeds on top before serving.
