Today, I’m sharing a delicious recipe that perfectly captures the essence of autumn. The warm, comforting flavors of pumpkin and spices combined with creamy risotto create a dish that is perfect for chilly evenings or special occasions. This Harvest Pumpkin Risotto is a unique twist on a classic dish that will impress your friends and family!

Ingredients:

  • 200g arborio rice
  • 250g pumpkin puree
  • 1 liter vegetable broth
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of fresh sage, chopped
  • 1/2 teaspoon of ground nutmeg
  • 50g parmesan cheese, grated
  • 50g butter
  • to taste

  • grater

To begin, heat the vegetable broth in a saucepan over low heat until simmering. In another saucepan, melt the butter and sauté the chopped onion and garlic until softened. Add the arborio rice and stir to coat the grains with butter.

Next, add a ladleful of hot vegetable broth to the rice and stir until the liquid is absorbed. Continue adding the broth, one ladleful at a time, stirring constantly until the rice is cooked but still slightly firm to the bite. This process will take about 20-25 minutes.

Once the rice is cooked, stir in the pumpkin puree, fresh sage, ground nutmeg, and grated parmesan cheese. Season with salt and pepper to taste. Cook for an additional 2-3 minutes until the pumpkin is heated through and the cheese is melted.

Remove the risotto from the heat and let it rest for a few minutes before serving. Garnish with additional parmesan cheese and a sprinkle of fresh sage for a beautiful presentation.

This Harvest Pumpkin Risotto serves 4 and weighs approximately 1200g when cooked. Each serving is around 300g and contains approximately 350 calories.
