Autumn Cooking: Wholesome Harvest Stew

Hello, fellow foodies! Today, I’m excited to share with you my latest creation: a delicious Wholesome Harvest Stew perfect for those cozy autumn nights. This hearty stew is filled with a variety of seasonal ingredients that will warm your soul and satisfy your taste buds. Let’s dive into the recipe!

Ingredients:

  • 3 medium carrots, sliced
  • 2 large potatoes, peeled and diced
  • 1 small butternut squash, peeled and cubed
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 1 can of cannellini beans, drained and rinsed
  • 1 can of diced tomatoes
  • 4 cups of vegetable broth
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 2 tablespoons of fresh thyme leaves

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large pot
  • wooden spoon
  • ladle

To start, heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant. Next, add in the sliced carrots, diced potatoes, and cubed butternut squash, stirring to combine.

Pour in the vegetable broth and diced tomatoes, then season with salt, pepper, and fresh thyme leaves. Bring the stew to a gentle simmer and let it cook for about 30 minutes, allowing all the flavors to meld together.

Once the vegetables are tender, add in the cannellini beans and simmer for an additional 10 minutes. Taste the stew and adjust the seasoning if needed.

Serve the Wholesome Harvest Stew hot in bowls, garnished with extra fresh thyme leaves if desired. This stew pairs perfectly with a slice of crusty bread or a side salad for a complete meal.
