Ingredients:

  • 1 sheet of puff pastry
  • 2 ripe pears, thinly sliced
  • 1 red onion, thinly sliced
  • 3 tbsp balsamic vinegar
  • 2 tbsp maple syrup
  • 1 tbsp fresh thyme leaves
  • ½ cup crumbled goat cheese
  • Salt and pepper to taste

To start, preheat your oven to 400°F (200°C). Roll out the puff pastry sheet on a lightly floured surface to form a rectangle. Place the pastry on a baking sheet and using a fork, prick the surface all over to prevent puffing.

In a non-stick pan, heat some olive oil over medium heat. Add the sliced red onion and cook until caramelized, about 10-15 minutes. Stir in the balsamic vinegar and maple syrup, cooking for an additional 5 minutes until the mixture thickens.

Arrange the caramelized onions on the puff pastry, leaving a border around the edges. Layer the sliced pears on top of the onions and sprinkle with fresh thyme leaves. Season with salt and pepper, then crumble the goat cheese over the pears.

Bake the tart in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crispy. Allow the tart to cool slightly before slicing and serving.
