As the weather starts to cool down and the leaves change colors, I find myself craving warm and comforting dishes to cozy up with. Today, I’m excited to share with you my recipe for Fall Harvest Stuffed Squash. This hearty and flavorful dish is a celebration of autumn produce and is sure to become a new favorite at your dinner table.

To start, gather the following ingredients:

  • 2 medium acorn squash
  • 200g quinoa
  • 100g kale, chopped
  • 50g dried cranberries
  • 50g toasted pecans, chopped
  • 100g feta cheese, crumbled
  • olive oil
  • salt and pepper

For this recipe, you will need the following kitchen tools:

  • chef’s knife
  • cutting board
  • rimmed baking sheet
  • medium saucepan
  • spoon

Preheat your oven to 400°F (200°C). Slice the acorn squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper. Place the squash halves on a rimmed baking sheet, cut side down, and roast in the oven for 30-40 minutes, or until tender.

While the squash is roasting, cook the quinoa according to the package instructions in a medium saucepan. Once cooked, fluff the quinoa with a fork and set aside.

In a large mixing bowl, combine the cooked quinoa, chopped kale, dried cranberries, toasted pecans, and crumbled feta cheese. Season with salt and pepper to taste.

Once the squash is tender, remove them from the oven and carefully flip them over. Fill each squash half with the quinoa mixture, packing it down lightly. Return the stuffed squash to the oven and bake for an additional 10-15 minutes, or until the filling is heated through.

Serve the Fall Harvest Stuffed Squash warm, garnished with a sprinkle of extra feta cheese and a drizzle of olive oil. Enjoy the comforting flavors of fall in every bite!
