Today’s Creation: Roasted Butternut Squash and Bacon Pasta

As the leaves start to change color and the weather cools down, I find myself craving hearty and comforting dishes. Today, I am excited to share with you my latest culinary creation: Roasted Butternut Squash and Bacon Pasta. This dish combines the sweetness of roasted butternut squash with the savory crunch of bacon, all tossed together with al dente pasta for a satisfying meal that will warm your soul.

To make this dish, you will need the following ingredients:

  • butternut squash (400g, peeled and cubed)
  • bacon (150g, diced)
  • pasta of your choice (300g)
  • olive oil (2 tbsp)
  • garlic (2 cloves, minced)
  • parmesan cheese (50g, grated)
  • fresh sage leaves (10 leaves)
  • salt and pepper to taste

Prepare your kitchen tools:

  • baking sheet
  • large skillet
  • pot for boiling pasta
  • mixing bowl
  • chef’s knife

Start by preheating your oven to 400°F (200°C) and lining a baking sheet with parchment paper. Place the cubed butternut squash on the baking sheet, drizzle with olive oil, season with salt and pepper, and roast in the oven for 25-30 minutes or until tender and caramelized.

In the meantime, cook the diced bacon in a large skillet over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the rendered bacon fat in the pan. Add minced garlic and fresh sage leaves to the skillet and sauté until fragrant.

Cook the pasta according to package instructions until al dente. Reserve a cup of pasta water before draining the pasta. Add the roasted butternut squash and cooked bacon to the skillet with the garlic and sage. Toss in the cooked pasta and grated parmesan cheese, adding pasta water as needed to create a creamy sauce.

Once everything is well combined, season with salt and pepper to taste. Serve the Roasted Butternut Squash and Bacon Pasta hot, garnished with extra parmesan cheese and fresh sage leaves.

This dish weighs approximately 1150g in total and serves 4-6 people, with each serving weighing around 190g. Each serving of this flavorful pasta dish is estimated to be around 450 calories.
