Today’s Dish: Miso-Glazed Pumpkin & Brussel Sprout Skewers

As the autumn leaves begin to fall and the crisp air fills my kitchen, I am inspired to create a cozy and flavorful dish that celebrates the season’s bounty. Today, I am excited to share with you my recipe for miso-glazed pumpkin and Brussel sprout skewers. This dish is a perfect blend of sweet and savory flavors that will warm you up from the inside out.

Ingredients:

  • 300g pumpkin, cubed
  • 200g Brussel sprouts, halved
  • 50g miso paste
  • 30ml maple syrup
  • 15ml soy sauce
  • 10ml sesame oil
  • 2 cloves of garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp sesame seeds

I start by preheating my oven to 200°C and lining a baking sheet with parchment paper. In a mixing bowl, I combine the miso paste, maple syrup, soy sauce, sesame oil, garlic, and ginger to create a flavorful glaze. I then add the cubed pumpkin and halved Brussel sprouts to the bowl, tossing them until they are well coated in the glaze.

Next, I thread the pumpkin and Brussel sprouts onto skewers, alternating between the two ingredients. Once all the skewers are assembled, I place them on the prepared baking sheet and sprinkle them with sesame seeds. The skewers go into the oven to roast for about 25-30 minutes, or until the vegetables are tender and caramelized.

Once the skewers are cooked to perfection, I remove them from the oven and let them cool slightly before serving. The miso glaze creates a sticky, umami-rich coating that pairs perfectly with the sweet pumpkin and crispy Brussel sprouts. The nuttiness of the sesame seeds adds a lovely crunch to each bite, making this dish a textural sensation.
