Spiced Apple and Bacon Stuffed Acorn Squash

Today, I’m excited to share a delicious fall recipe that combines the sweetness of apples with the savory goodness of bacon, all nestled in a tender roasted acorn squash. This dish is perfect for a cozy autumn dinner or a special occasion where you want to impress your guests with a unique and flavorful meal.

Ingredients:

  • 2 small acorn squash (about 500g each)
  • 6 slices of bacon (150g)
  • 2 medium apples, diced (about 300g)
  • 1 small onion, finely chopped (100g)
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp olive oil

Kitchen Tools:

  • skillet

To start, preheat your oven to 400°F (200°C). Cut the acorn squash in half lengthwise and scoop out the seeds and membranes with a spoon. Place the squash halves cut side down on a baking sheet and roast in the oven for 30 minutes, or until tender.

In a skillet, cook the bacon until crispy. Remove the bacon from the skillet and chop it into small pieces. In the same skillet, sauté the chopped onion until translucent. Add the diced apples, brown sugar, cinnamon, nutmeg, salt, and pepper to the skillet. Cook until the apples are tender, about 5-7 minutes.

Once the squash is tender, flip the halves over on the baking sheet. Fill each squash half with the apple and bacon mixture. Drizzle olive oil over the top and return to the oven for an additional 10 minutes to let the flavors meld together.

This Spiced Apple and Bacon Stuffed Acorn Squash recipe serves 4 people. Each serving weighs approximately 350g and has around 350 calories.

Tip:

For an extra touch of sweetness, sprinkle a little more brown sugar on top of the stuffed acorn squash before serving. This will caramelize in the oven and add a delicious crunch to the dish.
