Today’s Recipe: Caramelized Banana and Basil Ice Cream

Hey there, foodies! Today, I’m excited to share with you a unique and refreshing recipe that combines sweet caramelized bananas with the fresh, aromatic flavor of basil. This dish is perfect for those hot summer days when you’re craving something sweet and creamy with a twist. Let’s dive right in!

To make this delectable Caramelized Banana and Basil Ice Cream, you will need the following ingredients:

  • 2 ripe bananas (300g)
  • 1/4 cup brown sugar (50g)
  • 1/2 cup fresh basil leaves (15g)
  • 1 cup heavy cream (240ml)
  • 1 cup whole milk (240ml)
  • 1/2 cup granulated sugar (100g)
  • 4 egg yolks

Now, let’s gather our kitchen tools:

  • saucepan
  • mixing bowl
  • whisk
  • fine mesh strainer
  • ice cream maker

Start by peeling and slicing the ripe bananas. In a saucepan, melt the brown sugar over medium heat until it caramelizes. Add the sliced bananas to the caramel, stirring gently until they are coated and caramelized. Remove from heat and let it cool.

In a mixing bowl, whisk together the heavy cream, whole milk, granulated sugar, and egg yolks until well combined. Pour the mixture into the saucepan with the caramelized bananas and place it back on low heat. Stir continuously until the mixture thickens slightly, then remove from heat.

Using a fine mesh strainer, strain the mixture to remove any banana chunks and basil leaves. Allow the mixture to cool completely before transferring it to your ice cream maker. Churn the mixture until it reaches a creamy consistency.

Chop the fresh basil leaves finely and fold them into the ice cream during the last few minutes of churning. Transfer the ice cream to a container and freeze for at least 4 hours, or until firm.

The total weight of the cooked Caramelized Banana and Basil Ice Cream is approximately 800g, with 6 servings of around 133g each. One serving of this delightful treat contains roughly 250 calories.

An unusual tip for this recipe is to infuse the cream mixture with basil leaves overnight before straining. This will intensify the basil flavor and create a more fragrant ice cream.

I hope you give this Caramelized Banana and Basil Ice Cream a try and enjoy the unique combination of flavors. Feel free to get creative with additional toppings or mix-ins to make it your own. Happy cooking!
