Seasonal Cooking: Summer Strawberry Gazpacho

Today, I’m excited to share a refreshing and unique dish perfect for the hot summer days ahead: Summer Strawberry Gazpacho. This cold soup combines the sweetness of ripe strawberries with the tangy flavors of tomatoes and peppers, creating a delightful and unexpected flavor combination.

Ingredients:

  • 500g ripe strawberries
  • 300g ripe tomatoes
  • 1 large red bell pepper
  • 1 medium cucumber
  • 1/2 small red onion
  • 2 cloves of garlic
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste

Kitchen Tools:

  • blender
  • knife
  • cutting board
  • strainer
  • mixing bowl

To start, wash and hull the strawberries, then chop them roughly. Core the tomatoes and bell pepper, peel and dice the cucumber, finely chop the red onion, and mince the garlic cloves.

In a blender, combine the strawberries, tomatoes, red bell pepper, cucumber, red onion, and garlic. Blend until smooth. Add the olive oil, red wine vinegar, salt, and pepper, and blend again until well combined.

Strain the mixture through a fine-mesh strainer into a mixing bowl to remove any remaining seeds or chunks. Taste and adjust the seasoning if needed, then cover the bowl and refrigerate the gazpacho for at least an hour to chill and allow the flavors to meld together.

Before serving, give the gazpacho a good stir and taste one final time to adjust the seasoning. Ladle into bowls and garnish with a drizzle of olive oil, some freshly cracked black pepper, and a few sliced strawberries for a pop of color.

This Summer Strawberry Gazpacho serves 4 and each serving weighs approximately 300g. One serving contains approximately 150 calories.

Clever Tip:

For an extra burst of freshness, try adding a squeeze of lime juice to the gazpacho just before serving. The citrusy kick will elevate the flavors and make the dish even more refreshing!
