To make these comforting stuffed bell peppers, you’ll need the following ingredients:

  • 4 large bell peppers
  • 500g ground lamb
  • 1 cup cooked quinoa
  • 1/2 cup chopped dried figs
  • 1/2 cup crumbled feta cheese
  • 1/4 cup toasted pine nuts
  • 1/4 cup chopped fresh mint
  • 1 tsp ground cinnamon
  • Zest of 1 lemon
  • Salt and pepper to taste

Before starting, make sure you have the following kitchen tools on hand:

  • chef’s knife
  • cutting board
  • mixing bowl
  • baking dish

To begin, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes from the inside. In a mixing bowl, combine the ground lamb, cooked quinoa, chopped dried figs, crumbled feta cheese, toasted pine nuts, fresh mint, ground cinnamon, lemon zest, salt, and pepper. Mix everything together until well combined.

Stuff each bell pepper with the lamb mixture, pressing down gently to pack it in. Place the stuffed peppers in a baking dish and cover with foil. Bake in the preheated oven for 30 minutes, then remove the foil and bake for an additional 15 minutes until the peppers are tender and the filling is cooked through.

Once the stuffed peppers are done, remove them from the oven and let them cool slightly before serving. These comforting stuffed bell peppers are perfect for a weeknight dinner or a special weekend meal. Enjoy the delicious combination of flavors and textures in every bite!
