Summer Berry Gazpacho

Today, I’m excited to share a unique and refreshing summer dish that’s perfect for those hot days when you want something light and cool. This Summer Berry Gazpacho combines the sweetness of berries with the tanginess of tomatoes, creating a vibrant and delicious soup that’s sure to impress your taste buds.

Ingredients:

  • 600g ripe tomatoes
  • 300g strawberries
  • 150g blueberries
  • 1 medium cucumber
  • 1 small red onion
  • 1 red bell pepper
  • 2 cloves garlic
  • 3 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • to taste

To start, chop the tomatoes, strawberries, cucumber, red onion, and red bell pepper into small pieces. Mince the garlic cloves. In a blender, combine the chopped vegetables and berries, garlic, balsamic vinegar, olive oil, salt, and black pepper. Blend until smooth, then transfer the mixture to a bowl. Refrigerate the gazpacho for at least an hour to let the flavors meld together.

Once chilled, give the gazpacho a good stir and taste for seasoning, adjusting as needed. Serve the Summer Berry Gazpacho in bowls, garnished with a few extra berries and a drizzle of olive oil for an extra touch of richness.
