Ingredients:

  • 200g Arborio rice
  • 1 liter chicken broth
  • 1 cup fresh cherry blossoms
  • 100g Parmesan cheese, grated
  • 50g butter
  • 100ml white wine
  • 2 shallots, finely chopped

Pour in the white wine and stir until the wine is absorbed. Begin adding the simmering broth, one ladle at a time, stirring constantly and allowing the liquid to be absorbed before adding more. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

Once the risotto reaches the desired consistency, remove it from the heat and gently fold in the grated Parmesan cheese. Season with salt and pepper to taste. In a separate bowl, carefully rinse the cherry blossoms and gently fold them into the risotto, preserving their delicate petals.
