As the weather starts to cool down and autumn approaches, I find myself craving comforting dishes with a twist. Today, I’m excited to share with you my recipe for Sweet and Spicy Tamarind Chicken. This dish combines the tangy sweetness of tamarind with a kick of spice for a truly adventurous eating experience.

To make this flavorful dish, you will need the following ingredients:

  • 600g chicken thighs (boneless, skinless)
  • 50g tamarind paste
  • 30ml soy sauce
  • 45g honey
  • 15ml sriracha
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 30ml olive oil

For this recipe, you will need the following kitchen tools:

  • baking sheet
  • oven
  • small saucepan

Start by preheating your oven to 200°C. In a mixing bowl, combine tamarind paste, soy sauce, honey, sriracha, minced garlic, grated ginger, olive oil, salt, and black pepper. Whisk the marinade until well combined. Add the chicken thighs to the bowl and coat them evenly with the marinade. Cover and let marinate in the refrigerator for at least 30 minutes.

Once the chicken has marinated, place it on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and has a nice char on the outside.

While the chicken is baking, prepare the glaze. In a small saucepan, heat the remaining marinade over medium heat. Bring to a simmer and cook until the sauce has reduced and thickened slightly.

Once the chicken is cooked, remove it from the oven and brush with the tamarind glaze. Serve the Sweet and Spicy Tamarind Chicken garnished with fresh cilantro. This dish pairs perfectly with steamed rice or a crisp salad for a complete meal.
