  • Purple cauliflower (300g)
  • Canned jackfruit (200g)
  • Black sesame seeds (15g)
  • Chili-infused olive oil (30ml)
  • Coconut cream (200ml)
  • Szechuan peppercorns (10g)
  • Tamari sauce (15ml)
  • Sweet rice vinegar (20ml)

  • Large skillet
  • Oven
  • Wooden spoon

Preparation

To start, preheat your oven to 375°F. Cut the purple cauliflower into florets and spread them out on a baking sheet. Drizzle with chili-infused olive oil and roast in the oven for 20-25 minutes, or until tender and slightly caramelized.

In a large skillet over medium heat, add the canned jackfruit (shredded) and black sesame seeds. Cook until the jackfruit starts to brown and crisp up, about 10 minutes.

In a small saucepan, combine the coconut cream, Szechuan peppercorns, tamari sauce, and sweet rice vinegar. Simmer over low heat for 5-7 minutes to infuse the flavors.

Once the cauliflower is roasted, add it to the skillet with the jackfruit and sesame seeds. Pour the coconut cream sauce over the mixture and stir well to combine. Let it simmer for an additional 5 minutes to allow the flavors to meld together.

Tips for perfection

For an extra kick of heat and flavor, you can sprinkle some additional Szechuan peppercorns on top of the dish before serving. The numbing and tingling sensation of the peppercorns adds a unique and exciting element to this dish.
