Today’s Recipe: Spicy Thai Peanut Noodles

Hey there, foodies! Today, I’m sharing one of my favorite dishes that never fails to satisfy my cravings for something spicy and oh-so-delicious – Spicy Thai Peanut Noodles. This dish is perfect for a cozy night in or a quick weeknight meal that’s bursting with flavor.

Ingredients:

  • rice noodles (200g)
  • peanut butter (100g)
  • soy sauce (50ml)
  • chili garlic sauce (2 tbsp)
  • lime (1, juiced)
  • sesame oil (1 tbsp)
  • bell pepper (1, thinly sliced)
  • carrot (1, julienned)
  • scallions (2, chopped)
  • peanuts (handful, crushed)

Kitchen Tools:

  • large pot
  • colander
  • whisk
  • wok

Start by boiling water in a large pot and cooking the rice noodles according to package instructions. Once done, drain the noodles in a colander and set aside.

In a wok, combine the peanut butter, soy sauce, chili garlic sauce, lime juice, and sesame oil. Heat the mixture over medium heat until well combined and slightly thickened. Add in the sliced bell pepper, julienned carrot, and chopped scallions. Stir-fry the vegetables until they are slightly tender.

Next, add the cooked rice noodles to the wok and toss everything together until the noodles are fully coated in the spicy peanut sauce. Serve the Spicy Thai Peanut Noodles hot, garnished with crushed peanuts for an added crunch.

This dish serves 4 and each serving weighs approximately 300 grams. One serving is around 400 calories.

Pro tip: To kick up the heat in this dish, add a spoonful of Sriracha sauce to the peanut sauce mixture for an extra spicy kick!
