Hey there, foodies! I’m excited to share a new and adventurous recipe with you today. This Spicy Thai Beef Noodle Soup is a dish I discovered during a recent trip to Thailand, and it quickly became a favorite of mine. The combination of bold flavors and comforting noodles makes it perfect for a cozy night in or a gathering with friends.

Ingredients:

  • beef sirloin (200g)
  • rice noodles (100g)
  • coconut milk (200ml)
  • red curry paste (2 tbsp)
  • lemongrass stalks (2)
  • lime (1)
  • fresh cilantro (a handful)
  • bean sprouts (100g)
  • fish sauce (2 tbsp)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large pot
  • tongs
  • grater

To start, thinly slice the beef sirloin into strips and set aside. In a large pot, bring coconut milk to a simmer over medium heat. Add red curry paste and stir until fragrant.

Meanwhile, crush the lemongrass stalks with the back of your knife to release their flavor. Add them to the pot along with the beef strips. Let the soup simmer for 10 minutes until the beef is cooked through.

In the meantime, cook the rice noodles according to package instructions. Drain and set aside.

Once the beef is tender, squeeze in the juice of one lime and add fish sauce to taste. Stir in bean sprouts and fresh cilantro, then add the cooked noodles to the pot.

Allow the soup to simmer for an additional 5 minutes to let the flavors meld together. Serve hot and garnish with extra cilantro and lime wedges if desired.

This Spicy Thai Beef Noodle Soup weighs approximately 900g when cooked and serves 4 people. Each serving is around 225g and contains roughly 350 calories.
