Introduction

Today, I am excited to share a unique and flavorful dish that combines unexpected ingredients for a delightful culinary experience. This recipe was born out of a craving for something bold and different, perfect for a cozy night in or a special gathering with friends and family.

Ingredients

  • purple sweet potatoes (250g)
  • pistachios (50g)
  • tahini (30g)
  • maple syrup (20g)
  • harissa (15g)
  • lime (1, juiced)

Preparation

I start by preheating the oven to 200°C. Then, I scrub the purple sweet potatoes and poke a few holes in them with a fork before placing them on a baking sheet. I roast them for about 45-50 minutes until they are tender and caramelized. While the potatoes are roasting, I toast the pistachios in a dry pan until fragrant, then chop them for a crunchy topping.

Once the sweet potatoes are done, I let them cool slightly before peeling off the skin and placing the flesh in a food processor. I add the tahini, maple syrup, harissa, and lime juice, then blend until smooth and creamy.

Assembly

I transfer the sweet potato mixture to a mixing bowl and adjust the seasoning to taste. To serve, I smooth out the mixture on a plate, sprinkle the toasted pistachios on top for crunch, and drizzle with a swirl of extra harissa for a spicy kick.

Tips

For an extra burst of freshness, try adding a handful of chopped mint leaves to the sweet potato mixture before serving. The mint adds a refreshing contrast to the rich and savory flavors of this dish.
