Creating new and exciting dishes is a passion of mine, and today I am thrilled to share a recipe that combines bold flavors and unexpected ingredients. This Spicy Chickpea Stuffed Eggplant is a perfect dish for those looking to add a little twist to their dinner table.

Ingredients:

  • 2 medium eggplants
  • 200g cooked chickpeas
  • 150g cherry tomatoes, halved
  • 100g feta cheese, crumbled
  • 1 tsp red chili flakes
  • Handful of fresh parsley, chopped
  • 3 tbsp olive oil
  • Salt and pepper to taste

To start, preheat your oven to 200°C (400°F). Cut the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/2 inch border. Chop the eggplant flesh and set aside.

In a frying pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped eggplant flesh, cooked chickpeas, cherry tomatoes, red chili flakes, salt, and pepper. Cook for about 8-10 minutes until the mixture is slightly browned and fragrant. Remove from heat and stir in the crumbled feta cheese and fresh parsley.

Brush the hollowed-out eggplant halves with the remaining olive oil and season with salt and pepper. Place them on a baking sheet and fill each half with the chickpea mixture.

Bake in the preheated oven for 25-30 minutes, or until the eggplants are tender. Remove from the oven and serve hot, garnished with extra parsley if desired.
