Good Morning Sunshine Breakfast Bake

As the seasons shift and the mornings become cooler, I find myself craving a warm, comforting breakfast to start my day. Today, I’m excited to share with you my recipe for a Good Morning Sunshine Breakfast Bake. This dish combines unexpected flavors and textures to create a breakfast that will surely brighten your day.

Ingredients:

  • 2 medium sweet potatoes, peeled and cubed
  • 50g shredded coconut
  • 1/2 cup pomegranate seeds
  • 1 cup cooked quinoa
  • 1/2 cup almond milk
  • 1 tsp cinnamon
  • 2 tbsp maple syrup
  • 1 tbsp chia seeds
  • 50g chopped pistachios

I start by preheating the oven to 350°F (180°C) and greasing a baking dish with a bit of coconut oil. In a mixing bowl, I combine the cubed sweet potatoes, shredded coconut, pomegranate seeds, cooked quinoa, almond milk, cinnamon, maple syrup, and chia seeds. I gently mix everything together until well combined.

Next, I transfer the mixture into the greased baking dish, spreading it out evenly with a spatula. I sprinkle the chopped pistachios on top for added crunch and flavor.

I pop the baking dish into the oven and let it bake for about 30-35 minutes, or until the sweet potatoes are tender and the top is slightly golden brown.

Once the Good Morning Sunshine Breakfast Bake is done baking, I remove it from the oven and let it cool slightly before serving. The aroma of cinnamon and coconut fills the kitchen, making it even more inviting.

This breakfast bake weighs approximately 1000g and serves 4 people. Each serving is around 250g, and has an estimated calorie count of 300 per serving.
