Today, I’m excited to share my recipe for a delightful summer berry galette. With a buttery crust and a burst of fresh berries, this rustic dessert is perfect for enjoying the bounty of the season. Let’s dive in!

Ingredients:

  • 175g all-purpose flour
  • 50g granulated sugar
  • 1/4 tsp salt
  • 115g cold butter, cubed
  • 4-6 tbsp ice water
  • 300g fresh berries (such as strawberries, blueberries, raspberries)
  • 2 tbsp honey
  • Zest of 1 lemon
  • 1 egg, beaten

Kitchen Tools:

  • baking sheet

To start, preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. In a mixing bowl, combine the flour, sugar, and salt. Add the cold butter and use a pastry cutter to mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together.

On a lightly floured surface, roll out the dough into a circle about 1/4 inch thick. Transfer the dough to the prepared baking sheet. In a separate bowl, toss the fresh berries with honey and lemon zest. Arrange the berries on top of the dough, leaving a border around the edges. Fold the edges of the dough over the berries, creating a rustic crust.

Brush the crust with the beaten egg for a golden finish. Bake the galette for 25-30 minutes, or until the crust is golden brown and the berries are bubbling. Allow the galette to cool slightly before serving.

This summer berry galette weighs approximately 700g after baking and serves 6. Each serving clocks in at around 250 calories. A unique tip for this recipe is to sprinkle a bit of coarse sugar on the crust before baking for added crunch and sweetness.
