For this recipe, you’ll need the following ingredients:

  • 1 medium butternut squash, peeled and cubed
  • 2 apples, peeled, cored, and chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste

Before we begin, make sure you have the following kitchen tools on hand:

  • baking sheet
  • large pot
  • blender
  • knife
  • spoon

To start, preheat your oven to 400°F. Place the cubed butternut squash, chopped apples, onion, and garlic on a baking sheet. Drizzle with olive oil, sprinkle with cinnamon and nutmeg, and season with salt and pepper. Roast in the oven for 30-40 minutes, or until the vegetables are tender and caramelized.

Once the vegetables are roasted, transfer them to a large pot. Add the vegetable broth and coconut milk. Bring the mixture to a simmer over medium heat, then reduce the heat and let it simmer for 10-15 minutes to allow the flavors to meld together.

Using a blender, carefully puree the soup in batches until smooth. Return the soup to the pot and season with additional salt and pepper if needed. Serve hot, garnished with a drizzle of coconut milk and a sprinkle of cinnamon.
