Roasted Butternut Squash and Brussels Sprouts Salad

This Roasted Butternut Squash and Brussels Sprouts Salad is a combination of sweet and savory flavors that are sure to satisfy your taste buds. Ingredients:

  • 1 small butternut squash, cubed
  • 200g Brussels sprouts, halved
  • 1 red onion, sliced
  • 50g dried cranberries
  • 50g walnuts, chopped
  • 3 tbsp olive oil
  • 2 tbsp maple syrup
  • 2 tbsp balsamic vinegar
  • to taste
