Refreshing Summer Watermelon Gazpacho

As the summer heat begins to settle in, I find myself craving light and refreshing dishes to cool down. Today, I’m excited to share with you my unique recipe for Watermelon Gazpacho. This delightful dish combines the sweetness of ripe watermelon with the tanginess of tomatoes and a hint of spice from jalapenos, creating a perfect balance of flavors for a hot summer day.

Ingredients:

  • 1 small seedless watermelon, diced (about 600g)
  • 3 tomatoes, chopped (about 300g)
  • 1 cucumber, peeled and diced (about 200g)
  • 1/2 red onion, finely chopped (about 50g)
  • 1 red bell pepper, seeded and chopped (about 150g)
  • 1 jalapeno, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

To start, in a blender, combine the diced watermelon, chopped tomatoes, cucumber, red onion, red bell pepper, minced jalapeno, and fresh cilantro. Blend until smooth. Add in the lime juice, olive oil, salt, and pepper. Blend again until everything is well combined and the gazpacho reaches your desired consistency.

Transfer the gazpacho to a mixing bowl and refrigerate for at least an hour to allow the flavors to meld together.

Serving:

Once chilled, give the gazpacho a good stir and ladle it into bowls. Garnish with additional fresh cilantro leaves, a slice of lime, and a sprinkle of black pepper. Serve cold and enjoy the refreshing flavors of summer!
