Refreshing Summertime Gazpacho

Today, I’m excited to share a light and refreshing gazpacho recipe perfect for those hot summer days when you want something cool and satisfying. This dish is a favorite in my household during the summer months, and I hope it brings a burst of fresh flavors to your table as well.

Ingredients:

  • 5 large ripe tomatoes, roughly chopped
  • 1 cucumber, peeled and diced
  • 1 red bell pepper, seeded and chopped
  • 1 small red onion, diced
  • 2 cloves of garlic, minced
  • 1/4 cup of olive oil
  • 2 tablespoons of red wine vinegar
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of ground cumin
  • Handful of fresh herbs (such as basil, parsley, or cilantro) for garnish

Kitchen Tools:

To start, place the tomatoes, cucumber, red bell pepper, red onion, and garlic in a blender. Blend until smooth, then transfer the mixture to a large bowl. Stir in the olive oil, red wine vinegar, salt, black pepper, and cumin.

Chill the gazpacho in the refrigerator for at least an hour to let the flavors meld together. When ready to serve, ladle the gazpacho into bowls and garnish with fresh herbs.
