Refreshing Summer Gazpacho

Today, I’m excited to share a recipe for a refreshing summer gazpacho. As the temperatures rise, there’s nothing quite like a chilled bowl of this cold soup to cool you down and satisfy your taste buds. This recipe is packed full of fresh, vibrant flavors that are perfect for a hot summer day.

Ingredients:

  • 900g ripe tomatoes
  • 350g cucumbers
  • 150g red onion
  • 200g red bell pepper
  • 2 cloves of garlic
  • 60ml extra-virgin olive oil
  • 30ml red wine vinegar
  • 15g fresh basil
  • Salt and pepper to taste

To start, chop the tomatoes, cucumbers, red onion, red bell pepper, and garlic into small pieces. Add them to a blender along with the extra-virgin olive oil, red wine vinegar, and fresh basil. Blend until smooth, then season with salt and pepper to taste. If the soup is too thick, you can add a splash of water to reach your desired consistency.

Once blended, transfer the gazpacho to a large bowl and refrigerate for at least one hour to allow the flavors to meld together. When ready to serve, give the soup a good stir and ladle into bowls. Garnish with a drizzle of olive oil, a sprinkle of fresh basil, and some freshly cracked black pepper.
