As the weather starts to cool down, I find myself craving comforting and flavorful dishes to warm me up. That’s why I’m excited to share my recipe for Citrus Herb Roasted Chicken. This dish is the perfect balance of zesty citrus flavors and aromatic herbs, making it a delightful meal for any occasion.

Ingredients:

  • whole chicken (1.5 kg)
  • lemon juice (50 ml)
  • orange zest (1 tbsp)
  • fresh rosemary (2 sprigs)
  • thyme leaves (1 tbsp)
  • garlic cloves (4 cloves)
  • olive oil (50 ml)
  • salt and pepper to taste

Kitchen Tools:

  • cutting board
  • oven

To start, preheat your oven to 200°C. In a mixing bowl, combine the lemon juice, orange zest, chopped rosemary, thyme leaves, minced garlic, olive oil, salt, and pepper. Mix well to create a flavorful marinade.

Prepare your whole chicken by patting it dry with paper towels. Gently loosen the skin from the meat, being careful not to tear it. Rub the citrus herb mixture under the skin and all over the chicken, making sure to coat it evenly.

Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 75°C and the skin is golden brown and crispy.

Once the chicken is cooked through, remove it from the oven and let it rest for 10 minutes before carving. This will allow the juices to redistribute, ensuring a moist and flavorful chicken.

The total weight of the cooked dish is approximately 1800 grams, with 6 servings. Each serving weighs around 300 grams, with an estimated calorie count of 350 per serving.

One unique tip for this recipe is to add a splash of white wine to the roasting pan before placing it in the oven. This will create a delicious pan sauce to drizzle over the carved chicken for an extra burst of flavor.
