Ingredients:

  • 200g shrimp, peeled and deveined
  • 1 can (400ml) coconut milk
  • 2 tbsp red curry paste
  • Assorted vegetables of your choice (bell peppers, snow peas, carrots)
  • 200g pasta of your choice (linguine or spaghetti work well)
  • 1 lime, juiced
  • Fresh cilantro, chopped (for garnish)
  • To taste

  • wooden spoon
  • knife
  • cutting board

To start, cook the pasta according to the package instructions until al dente. Drain and set aside.

In a skillet over medium heat, add the coconut milk and red curry paste. Stir well until the curry paste is fully incorporated into the coconut milk.

Add the assorted vegetables to the skillet and cook until they start to soften, about 5 minutes. Then, add the shrimp and cook until they turn pink and opaque, about 2-3 minutes.

Once the shrimp are cooked, squeeze in the lime juice and season with salt and pepper to taste. Stir in the cooked pasta and mix until everything is well combined.

Remove the skillet from heat and garnish with fresh cilantro. Serve the Coconut Curry Shrimp Pasta hot and enjoy the delicious flavors!
