To start off, gather the following ingredients:

  • 2 red bell peppers
  • 1 cup of quinoa
  • 150g cherry tomatoes
  • 100g feta cheese
  • 2 tbsp olive oil
  • Handful of fresh basil leaves
  • 1 lemon, juiced
  • Salt and pepper to taste

For this recipe, you’ll need the following kitchen tools:

  • mixing bowl
  • baking dish

Start by preheating your oven to 375°F (190°C). While the oven is heating up, rinse the quinoa under cold water, then cook according to package instructions. Once cooked, fluff the quinoa with a fork and set it aside to cool.

Next, slice the tops off the red peppers and remove the seeds and membranes from inside. Place the peppers in a baking dish and set aside.

In a mixing bowl, combine the cooked quinoa, halved cherry tomatoes, crumbled feta cheese, olive oil, chopped basil leaves, lemon juice, salt, and pepper. Mix everything together until well combined.

Stuff each red pepper with the quinoa mixture, packing it in tightly. Place the stuffed peppers in the baking dish and drizzle a little extra olive oil on top.

Bake the stuffed peppers in the preheated oven for about 25-30 minutes, or until the peppers are tender and slightly charred on the edges.

Once cooked, remove the peppers from the oven and let them cool slightly before serving. Garnish with additional fresh basil leaves and a sprinkle of feta cheese.
