Colorful Autumn Butternut Squash Recipe

Today, I’m excited to share a new recipe that was inspired by the colors and flavors of autumn. As the leaves change and the air gets cooler, I love creating dishes that warm both the body and soul. This dish combines unexpected ingredients to create a truly unique and delicious experience.

For this recipe, you will need the following ingredients:
– 300g butternut squash, peeled and diced
– 200g wild mushrooms, sliced
– 1 red onion, diced
– 2 cloves of garlic, minced
– 1 tsp smoked paprika
– 1/2 tsp cinnamon
– 1/4 cup maple syrup
– 2 tbsp olive oil
– Salt and pepper to taste

For this recipe, you will need the following kitchen tools:

  • chef’s knife
  • cutting board
  • skillet
  • wooden spoon

To start, heat olive oil in a skillet over medium heat. Add the diced butternut squash and cook until slightly browned and tender. Remove from the skillet and set aside.

In the same skillet, add a bit more olive oil and sauté the red onion until translucent. Add in the minced garlic and sliced wild mushrooms, cooking until the mushrooms are golden brown.

Next, sprinkle the smoked paprika, cinnamon, salt, and pepper over the mushrooms and stir well to combine. Return the cooked butternut squash to the skillet and mix everything together.

Drizzle the maple syrup over the mixture, stirring gently to coat everything evenly. Let the flavors meld together for a few minutes before removing from heat.

This unique autumn dish weighs approximately 800g once cooked. It serves 4 people, with each serving weighing around 200g. An estimated calorie count per serving is 250 calories.

One tip to make this dish even more special is to add a sprinkle of chopped fresh sage right before serving. The earthy herb complements the sweet and savory flavors of the butternut squash and mushrooms beautifully.
