Ingredients:

  • 3 medium beets (about 300g)
  • 2 large grapefruits
  • 100g arugula
  • 50g feta cheese, crumbled
  • 50g walnuts, chopped
  • 2 tbsp olive oil
  • 1 tbsp honey
  • Salt and pepper to taste

To begin, preheat your oven to 400°F (200°C). Wash the beets thoroughly and wrap them individually in aluminum foil. Place the foil-wrapped beets on a baking sheet and roast them in the oven for about 45-50 minutes, or until they are tender when pierced with a fork. Once roasted, let the beets cool slightly before peeling and slicing them into thin rounds.

While the beets are roasting, prepare the grapefruit. Cut off the top and bottom of each grapefruit, then slice off the peel and pith. Segment the grapefruit by slicing between the membranes to release the segments into a bowl. Squeeze any remaining juice from the membranes into a separate bowl to use for the dressing.

In a small mixing bowl, whisk together the grapefruit juice, olive oil, honey, salt, and pepper to make the dressing.

In a large bowl, combine the arugula, roasted beet slices, grapefruit segments, and crumbled feta cheese. Drizzle the dressing over the salad and gently toss to combine. Top the salad with chopped walnuts for added crunch.
