Colorful Dragon Fruit and Halloumi Dish

Hey there, foodies! Today, I’m excited to share a unique and delicious recipe that I whipped up recently. The combination of flavors and textures in this dish is truly something special, and I can’t wait for you to try it out for yourself.

Ingredients:

  • purple potatoes (400g)
  • dragon fruit (1 large)
  • halloumi cheese (200g)
  • cherry tomatoes (150g)
  • pistachios (50g)
  • honey (2 tbsp)
  • olive oil
  • salt and pepper

Kitchen Tools:

  • chef’s knife
  • cutting board
  • baking sheet
  • frying pan

Preparation:

First, preheat your oven to 200°C. Wash and scrub the purple potatoes, then slice them into thick wedges. Place the potato wedges on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 25-30 minutes, or until crispy on the outside and tender on the inside.

While the potatoes are roasting, cut the dragon fruit into cubes and slice the halloumi cheese into thick slices. Heat a frying pan over medium heat and sear the halloumi slices until golden brown on both sides.

In a separate pan, heat a drizzle of olive oil and add the cherry tomatoes. Cook until they start to blister and burst. Roughly chop the pistachios and set aside.

Assembly:

Once the potatoes are cooked, arrange them on a serving platter. Top with the seared halloumi, diced dragon fruit, blistered cherry tomatoes, and chopped pistachios. Drizzle with honey and a sprinkle of salt and pepper.

Tips:

For an extra burst of flavor, try squeezing some fresh lime juice over the finished dish before serving. The acidity will help balance out the sweetness of the honey and the savory halloumi.

Serving:

This dish weighs approximately 800g in total and serves 4 people. Each serving is around 200g. Estimated calorie count per serving is 350 calories.
