Ingredients:

  • purple potatoes (500g)
  • dragon fruit (1 large)
  • fennel bulb (1 medium)
  • goat cheese (100g)
  • lemon (1)
  • honey (2 tbsp)
  • almonds (50g)
  • olive oil
  • salt

Kitchen Tools:

  • chef’s knife
  • cutting board
  • vegetable peeler
  • oven
  • baking sheet

Preparation:

Start by preheating your oven to 400°F (200°C). Wash and scrub the purple potatoes, then slice them into thin rounds. Spread the potato rounds on a baking sheet, drizzle with olive oil, and sprinkle with salt. Roast in the oven for 20-25 minutes until tender and slightly crispy.

While the potatoes are roasting, prepare the other ingredients. Peel the dragon fruit and slice it into thin wedges. Thinly slice the fennel bulb and crumble the goat cheese. Zest the lemon and set aside for later.

Once the potatoes are done, assemble the dish by layering the roasted potato rounds on a serving platter. Top with the sliced dragon fruit, fennel, goat cheese, and almonds. Drizzle with honey and a squeeze of lemon juice. Finish with a sprinkle of lemon zest and a pinch of salt.

Tips:

For an extra burst of flavor, try roasting the almonds before adding them to the dish. Simply spread the almonds on a baking sheet and roast in the oven for 5-7 minutes until fragrant.

Serving:

This colorful and flavorful dish weighs approximately 900g once assembled. It serves 4-6 people, with each serving weighing around 150g. Each serving is estimated to be around 250 calories.
