  • purple potatoes (300g)
  • dragonfruit (1 piece)
  • pistachios (50g)
  • coconut milk (200ml)
  • curry powder (1 tbsp)
  • maple syrup (2 tbsp)
  • lime (1)
  • cilantro (for garnish)

Kitchen Tools:

  • peeler
  • knife
  • cutting board
  • saucepan
  • blender

Preparation:

Start by peeling and chopping the purple potatoes into small cubes. In a saucepan, combine the coconut milk, curry powder, and maple syrup. Add the diced purple potatoes to the mixture and let it simmer over low heat until the potatoes are tender.

Meanwhile, peel the dragonfruit and cut it into chunks. In a blender, combine the dragonfruit chunks, pistachios, and the juice of one lime. Blend until smooth to create a vibrant pink sauce.

Once the purple potatoes are cooked, plate them and drizzle the dragonfruit sauce on top. Garnish with chopped cilantro for a fresh and fragrant finish.
