  • purple sweet potatoes (400g)
  • kiwi (3 pieces)
  • coconut milk (200ml)
  • turmeric powder (1 tsp)
  • honey (2 tbsp)
  • walnuts (100g)

  • oven
  • blender

Start by preheating your oven to 200°C. Wash and peel the purple sweet potatoes, then cut them into small chunks. Place the sweet potato chunks on a baking tray, drizzle with olive oil, sprinkle with turmeric powder, and roast in the oven for 25-30 minutes until tender.

While the sweet potatoes are roasting, peel and chop the kiwi fruit. In a blender, combine the chopped kiwi, coconut milk, and honey. Blend until smooth and creamy.

Once the sweet potatoes are cooked, remove them from the oven and allow them to cool slightly. In a serving bowl, mix the roasted sweet potatoes with the kiwi and coconut milk mixture. Stir well to combine all the flavors.
