Exploring New Flavors: Quinoa-Stuffed Bell Peppers

As I was strolling through the farmer’s market this morning, the vibrant colors of bell peppers caught my eye, inspiring me to create a unique and flavorful dish. Today, I’m excited to share my recipe for Quinoa-Stuffed Bell Peppers, a delicious and nutritious option for a hearty dinner or meal prep.

For this recipe, you will need the following ingredients:

  • 3 medium red bell peppers
  • 1 cup quinoa
  • 1 cup cherry tomatoes, halved
  • 1 can (400g) black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 ripe avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

To prepare this dish, you will need the following kitchen tools:

  • knife
  • cutting board
  • saucepan
  • baking dish

Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside. In a saucepan, cook the quinoa according to package instructions.

In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, black beans, corn, avocado, cilantro, lime juice, cumin, paprika, salt, and pepper. Mix everything together until well combined.

Divide the quinoa mixture evenly among the prepared bell peppers, pressing down gently to pack the filling. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.

Once the bell peppers are cooked through, remove them from the oven and let them cool slightly before serving. These Quinoa-Stuffed Bell Peppers are a perfect balance of flavors and textures, making them a satisfying and healthy meal option.

The approximate total weight of the cooked dish is 950g, with 3 servings total. Each serving weighs around 317g, with an estimated calorie count of 350 per serving.

A clever tip for this recipe is to sprinkle some shredded cheese on top of the stuffed peppers before baking for an extra cheesy kick. Feel free to experiment with different fillings and seasonings to make this dish your own!

I hope you enjoy making and tasting these Quinoa-Stuffed Bell Peppers as much as I do. Bon appétit!
